Black Bean and Mozzarella Salad

Crowd pleaser. Family pleaser. Kid pleaser. This black bean and mozzarella salad should be called a meal. It makes wonderful use of avocados and is perfectly complemented with a sourdough baguette.

Ingredients

  • ·1/4 cup smoked tomato vinagrette
  • ·1 can black beans, drained and rinsed
  • ·1 tsp ground cumin
  • ·2 cups corn, fresh or canned
  • ·2 oz smoked mozzarrela, cubed
  • ·1 pint cherry tomatoes, quartered
  • ·3/4 coarsley chopped avocado
  • ·1/2 cup finely chopped onion
  • ·1/4 cup chopped fresh cilantro

Preparation

  1. Step 1

    In a large bowl combine vinaigrette, beans, cumin, salt and pepper to taste. Set aside.

  2. Step 2

    Heat a non-stick skillet over medium-high heat. Add corn and pan-roast, stirring occasionally, until lightly browned. Remove from heat and let cool.

  3. Step 3

    Combine all ingredients and toss.

  4. Step 4

    Chill and serve when ready.

Notes

Tear off some big hunks of fresh sourdough baguette to accompany a bowl of this goodness.
