Black Bean and Mozzarella Salad
Crowd pleaser. Family pleaser. Kid pleaser. This black bean and mozzarella salad should be called a meal. It makes wonderful use of avocados and is perfectly complemented with a sourdough baguette.

Ingredients
- ·1/4 cup smoked tomato vinagrette
- ·1 can black beans, drained and rinsed
- ·1 tsp ground cumin
- ·2 cups corn, fresh or canned
- ·2 oz smoked mozzarrela, cubed
- ·1 pint cherry tomatoes, quartered
- ·3/4 coarsley chopped avocado
- ·1/2 cup finely chopped onion
- ·1/4 cup chopped fresh cilantro
Preparation
- Step 1
In a large bowl combine vinaigrette, beans, cumin, salt and pepper to taste. Set aside.
- Step 2
Heat a non-stick skillet over medium-high heat. Add corn and pan-roast, stirring occasionally, until lightly browned. Remove from heat and let cool.
- Step 3
Combine all ingredients and toss.
- Step 4
Chill and serve when ready.
Notes
Tear off some big hunks of fresh sourdough baguette to accompany a bowl of this goodness.
