    Classic Belgian Waffles

    Somehow waffles ended up being a comfort food in my house. They make both of my surly teenage girls smile and feel like little kids again. Top them with bananas and other fruit and mama will stay off your back!

    Ingredients

    • For the Waffles
    • ·4 eggs, separated
    • ·1 cup all-purpose flour
    • ·1/2 teaspoon vanilla
    • ·1/2 teaspoon salt
    • ·3 tablespoons butter, melted
    • ·1 cup milk
    • Toppings (optional)
    • ·Topping options: fresh fruit, maple syrup, butter, whipped cream, chocolate sauce, etc.

      Beat the egg yolks until light and fluffy.

      Add the vanilla and melted butter to the yolks and mix until combined.

      In a separate bowl, whisk together the flour and salt.

      Add the dry ingredients to the egg mixture, alternating with the milk, until well combined.

      Beat the egg whites until stiff peaks form, then gently fold them into the batter.

      Preheat the waffle iron on medium for about 2 minutes (or preheat each half separately).

    Lightly spray the iron with baking spray or brush with melted butter.

    Pour about 1 cup of batter into the waffle iron and cook for about 1 minute. Flip the iron and cook for another 2 minutes or until golden brown.
