    Corn Bread

    Simple one-bowl cornbread combining flour, cornmeal and wheat germ with beaten eggs, milk and oil. Baked at high heat for a golden crust.

    Ingredients

    • ·1 cup flour (generous)
    • ·1/4 cup sugar
    • ·2 1/2 tsp baking powder
    • ·1 tsp salt
    • ·1 cup cornmeal (generous)
    • ·3/4 cup wheat germ
    • ·2 eggs, well beaten
    • ·1 1/2 cups milk
    • ·1/3 cup vegetable oil

    Preparation

    1. Step 1

      Preheat oven to 425°F (220°C). Grease a baking pan.

    2. Step 2

      In a large bowl, whisk together the flour, sugar, baking powder, salt, cornmeal and wheat germ until evenly combined.

    3. Step 3

      In a separate bowl, combine the beaten eggs, milk and salad oil.

    4. Step 4

      Pour the wet ingredients into the dry ingredients and stir just until blended; do not overmix.

    5. Step 5

      Pour batter into the prepared greased pan and smooth the top.

    6. Step 6

      Bake at 425°F for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
