    Good Old-Fashioned Pancakes

    • ·1/2 teaspoon vanilla (optional)
    • ·Vegetable oil, cooking spray, or butter for the pan

    • ·Pinch of salt, or to taste
    • ·1/2 cup + 2 tablespoons milk
    • ·1 tablespoon + 1/2 teaspoon butter, melted

    • ·1/4 teaspoon vanilla (optional)
    • ·Vegetable oil, cooking spray, or butter for the pan

    2. Step 1

      Over a large bowl, sift together the flour, baking powder, sugar, and salt.

      In a separate bowl, beat the egg. Add the vanilla (if using), milk, and melted butter; mix to combine.

      Make a well in the center of the dry ingredients. Add the liquid ingredients and mix until smooth.

      Heat a lightly oiled griddle or pan over medium-high heat (about 350°F). Test that the pan is preheated by sprinkling a few drops of water — the drops should dance or form bubbles.

    6. Step 5

      Pour batter onto the hot griddle. For average pancakes use about 1/4 cup batter; for smaller pancakes use about 1 tablespoon. Cook until bubbles form and the edges are dry and set, then flip and cook until browned on the other side. (Optional test pancake: place 1 tbsp batter in the center, cook ~1 minute, then flip to finish.)

      Repeat with remaining batter and serve pancakes warm.

    Recipe includes a full recipe (8 servings) and a half recipe. Vanilla is optional. Use vegetable oil, cooking spray, or butter for the pan. Heat pan to medium-high (~350°F) and test with a few drops of water to check preheat.
