Overnight Cinnamon Rolls

- ·2 packages (1/4 ounce each) active dry yeast
- ·1 1/2 cups warm water (110°F to 115°F)
- ·1/2 cup sugar
- ·1/2 cup softened butter
- ·1 1/2 teaspoons salt
- ·2 large eggs, room temperature
- ·5 1/4 to 5 3/4 cups all-purpose flour
- CINNAMON FILLING
- ·1 cup packed brown sugar
- ·1/4 cup ground cinnamon
- ·1/2 cup softened butter, divided
- GLAZE
- ·2 cups confectioners' sugar
- ·1/4 cup half-and-half cream
- ·2 teaspoons vanilla extract
Preparation
- Step 1
In a small bowl, dissolve the yeast in the warm water. In a large bowl, combine the sugar, butter, salt, eggs, yeast mixture, and 3 cups of the flour. Beat on medium speed until smooth. Stir in enough of the remaining flour to form a soft dough — it will be sticky. Do not knead. Cover and refrigerate overnight.
- Step 2
For the filling: in a small bowl, mix the brown sugar and cinnamon. Turn the dough onto a lightly floured surface and divide it in half. Roll each half into an 18x12-inch rectangle. Spread each rectangle with 1/4 cup of the softened butter, then sprinkle each with half of the brown sugar mixture.
