    • ·2 stalks celery, thinly sliced
    • ·2 shallots, chopped
    • ·1 cup all-purpose flour
    • ·1 pound boneless, skinless chicken thighs (about 8)
    • ·1 teaspoon poultry seasoning
    • ·Kosher salt and black pepper
    • ·1/2 cup dry white wine
    • ·1 cup low-sodium chicken broth
    • ·1 cup frozen peas
    • ·1/2 cup heavy cream

    Preparation

    1. Step 1

      Place carrots, celery, and shallots in a 4-quart slow cooker.

    2. Step 2

      Place flour in a shallow bowl, and dredge chicken in the flour, shaking off excess.

    3. Step 3

      Arrange chicken on top of vegetables in slow cooker, and sprinkle with poultry seasoning, salt, and pepper.

    4. Step 4

      Add wine and broth to cooker.

    5. Step 5

      Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours.
