Slow Cooker Split Pea Soup
This is a perfect winter soup, filling and flavorful. Carrots and garlic add antioxidant power. Use bacon or a small ham hock for flavor. Enjoy with a hearty cranberry walnut bread if you can find it. The fresh parsley is key in this dish.

- ·1 pound dried green split peas, rinsed
- ·1 meaty ham bone, or 2 ham hocks, or 2 cups diced ham
- ·2 carrots, sliced
- ·1/2 medium yellow onion, chopped
- ·2 stalks celery, chopped
- ·2 cloves garlic, finely chopped
- ·1 bay leaf
- ·1/4 cup chopped fresh parsley
- ·1/4 teaspoon fine sea salt
- ·6 cups chicken broth
- ·1/4 teaspoon ground black pepper

- Step 1
In a slow cooker, arrange in layers the split peas, ham bone or ham hocks (or diced ham), carrots, onion, celery, garlic, bay leaf, and parsley.

Top with chicken broth, but do not stir.

Cover and cook on high for 4 to 5 hours or on low for 8 to 10 hours, until the peas are very soft and the ham falls off the bone.
